Russian Olive Salad

You can also portion out the salad and coat in mayo for the amount you need at that time.
Ingredients
- 4-5 large potatoes
- 6-7 eggs
- 1 can of sweet peas
- 1 can of Israeli pickles
- 5 turkey hotdogs (some Russians use bologna, others don’t use this at all)
- 1 medium onion
- Salt, pepper, mayonnaise to taste
Method
- Wash and boil potatoes until they ready (you can easily poke a knife through them). Let cool then peel skin off and cut into small cubes
- Cook eggs until hard boiled, peel and dice
- Cut hotdogs into small cubes
- Dice onions and pickles
- Add sweet peas
- Add all ingredients into a extra large salad bowl, mix, add salt, pepper and mayonnaise to taste.
