Russian Olive Salad

You can also portion out the salad and coat in mayo for the amount you need at that time.


  • 4-5 large potatoes
  • 6-7 eggs
  • 1 can of sweet peas
  • 1 can of Israeli pickles
  • 5 turkey hotdogs (some Russians use bologna, others don’t use this at all)
  • 1 medium onion
  • Salt, pepper, mayonnaise to taste


  1. Wash and boil potatoes until they ready (you can easily poke a knife through them). Let cool then peel skin off and cut into small cubes
  2. Cook eggs until hard boiled, peel and dice
  3. Cut hotdogs into small cubes
  4. Dice onions and pickles
  5. Add sweet peas
  6. Add all ingredients into a extra large salad bowl, mix, add salt, pepper and mayonnaise to taste.
