Miso glazed salmon

Ingredients
- 1/4 cup white miso paste
- 1 1/2 tsp grated ginger
- 2 gloves minced garlic
- 1tsp soy sauce
- 1tbsp rice vinegar
- 2tsp brown sugar
- 1 whole side of salmon
- 2 large sliced portobello mushrooms
- 1tbsp olive oil
- kosher salt
- ground black pepper
- toasted sesame seeds
- slice scallions
Method
- Pre-heat oven to 400 degrees F
- In a bowl, combine miso paste, ginger, garlic, soy sauce, vinegar and brown sugar
- Brush the mixture over the salmon; place mushroom slices over it, slightly overlapping. Brush mushrooms with olive oil. Season with salt and pepper
- Bake uncovered for 25 minutes
- Garnish with scallions and sesame seeds
