Miso glazed salmon

Ingredients

  • 1/4 cup white miso paste
  • 1 1/2 tsp grated ginger
  • 2 gloves minced garlic
  • 1tsp soy sauce
  • 1tbsp rice vinegar
  • 2tsp brown sugar
  • 1 whole side of salmon
  • 2 large sliced portobello mushrooms
  • 1tbsp olive oil
  • kosher salt
  • ground black pepper
  • toasted sesame seeds
  • slice scallions

Method

  1. Pre-heat oven to 400 degrees F
  2. In a bowl, combine miso paste, ginger, garlic, soy sauce, vinegar and brown sugar
  3. Brush the mixture over the salmon; place mushroom slices over it, slightly overlapping. Brush mushrooms with olive oil. Season with salt and pepper
  4. Bake uncovered for 25 minutes
  5. Garnish with scallions and sesame seeds
