Granola

YOU CAN ALSO TOP WITH MORE MAPLE SYRUP OR HONEY

I prefer to serve on yogurt or with milk (like cereal)

Ingredients

1 oz roasted salted almonds
3 oz maple syrup
2 oz dark brown sugar
12 oz oats
1 oz pumpkin seeds
1 oz unsweetened coconut (shredded)
1/2 oz chia seeds (could also use more)
2oz dried apricots
2 oz dried cranberries
2oz dried figs
1/2 cup coconut oil
1 Tablespoon vanilla extract
1 teaspoon salt

Method

Preheat oven to 325°F or 163°.
Line a rimmed baking sheet with parchment paper, grease with non stick spray.

Coarsely chop almonds.

In a large bowl, whisk maple syrup, brown sugar, oil, vanilla, and salt together.

Add oats, almonds, pumpkin seeds, coconut, chia and fold together with a spatula until everything is coated.

Transfer oat mixture to prepared baking sheet and spread into a thin layer then press compact.

Bake on upper oven rack until lightly browned (about 40-45 mins)

Let cool room temp for 1 hour.

Charley chop dried fruits.

Once granola is cooled, break into pieces.

Stir in dried fruit and enjoy.
