Chewy peanut butter cookies
by Jessica Fuchs

Ingredients

  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 egg
  • 1/4 tsp bicarbonate of soda/baking powder
  • milk (if needed)

Method

  1. Preheat the oven to 350 degrees F or 180 degrees C.
  2. In a large bowl stir together 1 cup creamy peanut butter, 1 cup sugar (I sometimes use 1/2 cup of brown sugar to be a tad healthier), and 1 egg until smooth. To make these cookies a little chewy I add 1/4 teaspoon of bicarbonate of soda/baking soda. Depending on the peanut butter you use the mixture can be a little thick so to loosen it up you can add between 15-30ml of milk if needed
  3. Roll into 1 inch or 2.5cm balls with your hands, if you do not have a scoop and place onto a baking sheet lined with baking paper
  4. If you want the traditional peanut butter cookie shape press down with the back of a fork and then press again from the opposite direction, to form the criss-cross pattern on top. I just flattened mine a bit to look more like chewy American style cookies
  5. Bake for 12 minutes and then let cool on the tray for 1-2 minutes before removing to a wire rack to finish cooling.
