Baked avocado eggs

Ingredients

· 1 ripe avocado
· 2 eggs
· Salt, pepper to taste
· Scallions (optional)
· Smoked paprika (optional)

Method

  1. Preheat oven to 425°F/220°C
  2. Slice avocado length wise and remove pit, making sure that each well is deep. Spoon out any excess avocado, and sprinkle lightly with salt and pepper
  3. Place avocados on a baking dish, and carefully crack one egg into each half
  4. Bake for 15-20 min, or however runny you like your eggs (now is your opportunity to fix your hair, put on your makeup, and get dressed for the day!)
  5. Sprinkle with salt and pepper and add toppings such as smoked paprika, scallions (you can even use pre-made turkey bacon bites!) and enjoy!
