Apple Pancakes
by Lilya Orenshteyn

Ingredients

  • 2 cups of buttermilk or whey (leftover from the Farmer Cheese recipe), warmed up in microwave for 90 sec
  • 2 eggs
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • pinch of salt
  • 2 cups or so of flour
  • 1/2 tsp vanilla extract
  • cinnamon and sugar to taste – about 2 tablespoons
  • 2 Granny Smith apples ?, peeled and grated

Method

  1. Mix warm buttermilk or whey with a pinch of salt, eggs and slowly add flour, baking soda and baking powder until you have sour cream consistency. Add sugar, cinnamon, vanilla and grated apples, mix well.
  2. Turn on a skillet on medium high heat, melt a bit of butter or use a bit of oil; use a 1/4 cup measuring cup to pour your batter on the skillet, cook until bubbles appear around the edges, flip over for another minute or so. Add butter or oil as needed so that the skillet does burn the pancakes as they cook.
