Almond butter noodles

You can serve this as a side dish when entertaining, or add any protein you like on top for a weeknight meal. It can also be enjoyed as a cold noodle salad for lunch!
This makes 1 serving but can easily be doubled, tripled, etc.
Ingredients

~4 oz. of your favorite noodles (rice noodles would be best for the Asian kick, but I personally love this with whole grain spaghetti)

1 tbsp soy sauce

1/4 cup almond butter (or other nut butter); one without added sugar or oil is best (if yours has added sugar, you may want to omit the sweetener below)

2 tbsp lime juice

1 tbsp liquid sweetener (honey, maple syrup, or agave)

1 tbsp rice wine vinegar

1-2 tbsp water
-
1 tsp grated fresh ginger (powdered ginger is fine too)

1 tsp garlic powder
Method
- Cook the noodles as directed.
- Whisk all remaining ingredients together until it makes a thick sauce. When adding the water, add a half tablespoon at a time until you reach desired consistency (I like to use 1.5 tbsp).
- Pour the sauce over the noodles, and garnish with sesame seeds, crushed red pepper flakes, and/or green onions!
